Hands-On Classes with Recette

The canelé de Bordeaux is perhaps one of the rarest pastries — infused with vanilla bean and rum, it has a crispy and chewy exterior and a soft custard center. In this class we will uncover the secrets to making perfectly traditional canelés, a method that has been followed for over 300 years.

Each student will have an opportunity to make a dozen canelés, learning artisanal techniques and modern tips for making perfect canelés.

All supplies for the class will be provided. Each student will take home their freshly-baked canelés, as well as a bit of extra canelé batter to bake at home.

Direct from our small manufacturing partner in Bordeaux, we are now offering authentic copper canelé molds. These are the same molds we use for our daily production.

Each set contains: 4, 8 or 12 copper molds (2”x2”), and 1 ounce of local beeswax, as well as instructions for seasoning your molds.
