What is a canelé? A canelé is a traditional French pastry from the Bordeaux region of France. It’s usually flavored with vanilla bean and spiced rum. They are best described as a baked custard pastry with a dark, caramelized exterior crust and a soft, creamy interior texture. Truly, they are a bit hard to describe because there is nothing else really like a canelé.

How long will canelés keep? For the full canelé experience – crispy and chewy outside, against a soft, creamy interior – they are best the day they are baked. Although, some prefer them best a day old, when the exterior has softened just a bit. To be safe, you can keep them in the fridge for up to 5 days or in the freezer for up to 2 weeks. Let them warm up to room temperature before serving. (See tips on storage below.)

How should canelés be stored? For all flavors that do not have cream cheese frosting or fruit curd fillings, you can store them at room temperature in their bakery box for up to 1 day. All others should be stored in the refrigerator within a few hours of purchasing.If you plan to keep them longer than a day, transfer them to an airtight container and store in the fridge for up to 5 days. Again, let them warm up to room temperature before serving.

How should canelés be transported? Place the box of canelé flat on the floor of your car, or another level and secure flat surface, to prevent them from shifting during travel. And be sure to turn off the heat during the winter!
